CRACKers. Seriously. You’ll want to hoard them at your next gathering.
Merry Christmas Eve, all! I am abundantly unready for the holiday. My credit card fraud situation still has yet to resolve itself so I haven’t finished my Christmas shopping, and it’s not looking like I’ll have any luck today. True bummer some asshole decided to try and blow $1,000 on some type of tickets. Not only is my holiday cheersing suffering, but I have, you know, bills due within the next few days.
Just a menial detail.
Back on point, though, Christmas really crept up behind then abruptly nipped right on my ass like “hey, hey lady, I’m here now!” About the only shit I had together was my Christmas menus and the food for J and I’s dinner on Wednesday. Aside from that? Totally unprepared. My decorations are haphazard at best, though as always we got our tree set up in early December and wrapped lights around our balcony. I also bought enormous quantities of these bottle brush trees and they’re sort of just flung around everywhere.
If you’re badly steering that boat with me, here’s an ultra simple appetizer you can prepare today for your Christmas Eve-ning and Saturday festivities. They’ll be a big hit for everyone – especially among those who only order Caesar salad if they have to choose a plate of greens as a side at a restaurant. The buttery, parmesan-infused blend tastes just like a good Caesar dressing, and tossed over a crisp cracker? Perfect. 10/10. You advance to the next level of excellence, son.
All Its Cracked Up To Be
Just a few steps are needed for this accoutrement.
I prepare my baking sheets with lightly greased wire cooling racks (the ones you use for cookies) set overtop. This ensures all sides of the crackers crisp up to the golden beauties they aspire to be.
Then, preheat the oven to 350.
Melt a stick of butter in the microwave in a big ole bowl, then stir in a whole bunch of seasonings. Don’t sweat, it’s nothing exotic: Worcestershire, maple syrup, dijon mustard, dried parsley, dried oregano, garlic powder, onion powder, red pepper flakes, fresh parmesan, and a pinch of salt and pepper. Whisk it up until combined, then drop in your crackers. Very carefully fold and toss the crackers in the sauce until all are well coated. I give this a good few minutes. Some crackers will inevitably chip, but it’s cool. Just eat those. Don’t be a dick and use it as an excuse to eat all of them, though.
Lay the crackers in a single layer on the baking sheets. Bake for 15-20 minutes until golden. Remove from the oven and let dry on the racks for around 20 minutes to get a lovely final crisp.
Super duper easy, folks.
I’ll be arranging a batch of these on my cheeseboard tonight along with the Gingersnap Munch Mix as a sweet counterpart. I’d imagine they’ll see many a slab of brie. You can throw some in a big snack blend if you’re making a variety of savory nibbles, like Goldfish or cheese crackers and pretzels. Sour cream and onion dip or hummus sound like great options, too, honestly.
Crackers are truly a great any time of year snack. When I don’t feel like making a real lunch, I’ll often throw a bunch of veggies and crudites, maybe some vegetarian chicken, on a plate with a handful of crackers and hummus to dip. In fact, I might do this for dinner some night seeing as I’ll likely want to socially distance from the kitchen for a day or two after Christmas. Hoping Santa brings me leftovers of these.
