The perfect winter evening: fire place, a lazy cat curled at my feet, and a cup of cocoa. Bonus points for booze.

Well, I landed one out of three in my above scenario, so I guess that’s something?

For all my connoisseurs of hot buttered rum, here’s a twist that steps a few pillars up from the classic, beloved holiday recipe. By combining a rich but simple hot chocolate formula with the spiced and spiked warm cocktail, we create the coziest sip for cold nights. Ribbons of warmth glow down every chilly crevice of your soul until whatever trace of sadness exists melts off into memory.

I love this drink, and plan to make it at every opportunity this season. Mom and I are building cookie houses this Sunday and you bet I’m heating a pan of this up for us to enjoy, even though it’ll be about 80 degrees and nowhere near a wintry atmosphere. Can still pretend. Sometimes the Christmas spirit has to be modified to suit the environment.

Enjoy a mug of this Buttered Rum Hot Chocolate over the weekend, hopefully in good company, with some sort of festive activity to boot. It’s very easy to make, with just a few staples including a good spiced rum of your choice (you can also make it with bourbon!) A serving of this and poof! Immediate good vibes.

Ya’ll would probably want to smack me if I named this Hot Buttered Rum Hot Chocolate. Least, I’d want to smack me.

Many hot cocoas nowadays are milk-based, but this one is rich enough that water is perfectly ample. Boil a couple cups on the stove or in your kettle, then move off the heat and pour in a good helping of spiced rum.

In a bowl, microwave some butter with good-quality dark chocolate chips or chunks until good and melted. Whisk in dark brown sugar, cinnamon, cayenne pepper, a pinch of salt, and a good amount of vanilla extract. I’m always generous with vanilla. Stream the chocolate mixture into the water, whisking, until combined. The result is a thick texture and deep chocolate hue.

Grab your cutest mugs, divide the hot chocolate, and slap on a bunch of whipped cream and whatever garnishes you prefer. I used a touch of cinnamon and caramel brulee chunks on my cups, but a whole slew of shit works here. Chocolate curls, cocoa powder, cinnamon sticks…many options!

My favorite season warrants attention, and I plan to spoil it like a yippee divorced lady does her mini chihuahua. Except maybe less obnoxiously.

A big cup of spiked chocolatey cozy, a perfect drink to sip by the fireside. Or while wishing you had a fireside.

Ingredients
  

  • 2 1/2 cups water
  • 1/2 cup spiced rum, or bourbon
  • 1/2 cup dark chocolate chips
  • 4 tbsp butter
  • 1/4 cup dark brown sugar
  • 2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • pinch kosher salt, or to taste
  • whipped cream, cinnamon, and cocoa powder, to top

Instructions
 

  • In a microwave-safe bowl, heat the chocolate chips and butter for 45 seconds on high powder. Stir to melt and combine, then whisk in the brown sugar, cinnamon, cayenne, vanilla, and salt.
  • Bring the water to a boil in a small sauce pot. Remove from the heat and pour in the rum. Stream in the chocolate mixture, whisking constantly, until smooth.
  • Divide the cocoa into two large mugs. Garnish with lots of whipped cream, cinnamon powder, and cocoa powder, as desired.
