ode to golden + south table trail mix



Colorado thrummed my heartstrings from my first visit in 2016. Two cheap January flights and my sister and I torpedoed to the landlocked mountainous state for two stray days and a weekend. This year, 2019, the love continued though the circumstances shifted. I saw soaring landscape but also potential energy locked in a coil awaiting its chance to bound to freedom. Alongside a soul I’m so joyous to call mine I hiked to the flat of a mountain they call Table, minutes after storms sheared the town and rumbled off to bully other cities. I learned of the importance of trail running shoes. Of sharing paths, both with strangers and those who wish to keep you close. Of a well-groomed walking stick on pebbly descents. The mountains sing endless verses, and to listen and absorb is in our best interests as visitors.



After our volunteer escapade and short tour of Salida, we rode for an obnoxious duration – almost six hours, due to a single stoplight in Fairplay pausing traffic down a major highway – to meet one of his friends for dinner. Timberline Trailhouse. The service wasn’t stellar, but the vegetarian jambalaya was. C urged me to convince my guy to scoot out to Golden sooner than later. I promised I would. I’ll work on it. I want to be here, too. The following morning I whimpered through a run up part of Chimney Gulch. Trail shoes. Trail shoes! I sped off when we hit concrete, wired from fear and a need to reground. We had blueberry oatmeal for breakfast, swam in a proper-length pool, ate glorious sandwiches, mine with olives and feta and pepperoncinis on a thick wheat roll.




My love for blueberries, for him (he loves blueberries), and for mountains inspired this trail mix. An easy snack for uphill trekkers, or those who just want a munch. Keeps for ages. Hiking trip highly recommended as an accompaniment. People to share it with, too.


Ingredients
- 1/2 cup dried blueberries
- 1 cup salted cashews
- 1/2 cup white chocolate chips
Instructions
- Mix everything in a small bowl. Enjoy immediately, or portion into bags for later snacking.
