IT’S BOOTY FRUIT TIME.

I found one usable peach at the grocery store the other day and had to get the peachy keen recipes going. Though, you can only do so much with a single solitary peach. The cocktail is the logical route for that phenomenon.

I originally wrote phenomenom by mistake, and kinda wanted to keep the typo there because it felt relevant still.

Enjoy these lovely Peach Elderflower Spritzes with your pals or family over the weekend. They’re light and bubbly, perfect for summertime as they won’t slosh in your gut like beer. I do love a beer while cooking out, but it usually fills me up before I even get to the main course. Not ideal if I’m whipping up a tasty meal on the barbie.

Peaches aren’t quite yet widespread, and those that are typically arrive in the clingstone category. These dudes are nearly impossible to use in cooking since the pit sticks so stubbornly to the skin that you’re apt to rip the peach in half before you can so much as think of making slices. The good news is that this recipe works with canned or frozen, thawed peaches as well. So if you have a random can of clings in your pantry that you want to use, you’re good to go.

If using frozen peaches, make sure you thaw a portion to use for your drink. Think 1/2 cup, 1 cup if you want some puree left over.

Then, all you need is to find a nice tall glass to house your drink. Stir together some of the puree (you likely won’t need all of it) with St. Germain – elderflower liqueur, a delightful spirit with notes of pear and apple – and a little lemon juice. Then add ice, pour over some prosecco, and finish with sparkling water. And fin!

Whether using canned, thawed, or fresh, pop your fruit into a food processor or blender and whiz until smooth. If there’s any chunks of skin in the puree (gross), strain them out with a sieve and discard. No need for globs in your spritz.

As far as the bubbly wine goes, you can also use prosecco rose, that shit is delicious too, or a brut or even champagne.

And, if you can’t find peaches yet (sads), this drink works wonderfully with strawberries or raspberries, too! Use an equal amount as you would the peach puree.

A summery size-up from your typical St. Germain cocktail.

Servings 1 cocktail

Ingredients
  

  • 1 large peach (peeled if desired)
  • 2 oz St. Germain (elderflower liqueuer)
  • 1/2 oz lemon juice
  • 4 oz prosecco
  • sparkling water, to top
  • mint leaves and peach slices, for garnish

Instructions
 

  • In a blender or food processor, puree the peach until smooth. If there's chunks of skin (lovely mental image), strain out with a fine mesh sieve and discard. One peach makes enough puree for about 2 drinks.
  • In a tall glass, stir together 2 oz of the peach puree with the lemon juice and St. Germain. Fill the glass with ice and carefully pour in the prosecco. Top with sparkling water.
  • Garnish with mint leaves and a peach slice, as desired.
