Happy Friday Happy Hour! Much happy, very capital letter, so wow.

Hoorah-ing the weekend with a Peach Margarita. So simple, but so perfect for cozying up inside, having a fiesta, or milling about by the pool. I’ve bought peaches out the wazoo and am trying to really embrace the season of these brilliant fruits before they’re gone (and before they rot on my countertop).

Though whiskey and bourbon have my heart as far as hard liquors go, the margarita steals the favorite mixed drink category. Big fan of their casual mien; almost any combination guarantees a relaxing atmosphere.

Every time I’ve considered creating a cocktail, my mind drifts back to the good ole marg. They’re utterly versatile and almost foolproof. Tequila drinks slip seamlessly between seasons, one outfit to the next, like any good movie star worth their salt. Or sugar. If you prefer the sugar rim.

Margarita, Margarita, Margarita

I don’t think that has the same effect as Bloody Mary. I sure hope not. Unless you conjure a drink in hand rather than a spooky historical figure. That’s cool, then.

I love rimming cocktail glasses, so I start with a chili salt fixture that contrasts the sweet drink perfectly. You can try chili sugar as well – both are nice. Or, leave the glass clean.

Next, grab a big ole peach, slice out the pit, and puree until smooth. I kept the skin in tact but you can peel yours if you’d like. Both ways are correct. The puree might be more than you need for a single cocktail if you use a massive peach like I did, but it’s perfect if you’re mixing up multiple. A smaller peach will probably leave you with enough puree for two drinks.

Either shake or stir some peach puree with agave, tequila, lime juice, and my key ingredient: peche de vigne, or peach liqueur. This intensifies the peach flavor greatly so it climbs up above the tequila. Peach schnapps and creme de peche are interchangeable for the liqueur – I’m pretty sure they’re all the same thing, just named differently.

Pour your creation over lots of ice and garnish with fresh peach slices, mint, and/or basil.

After the hectic nature of the week, I can’t think of much more I want to do than just lounge out by the water with my favorite and enjoy a no-frills drink and no-expectations day. Maybe that’s just a sign that I need a vacation. We’ve hit a travel drought of late, so perhaps just bringing a vacation vibe home will do the trick in some respects.

Light and fresh, flavored with fresh peach puree and a little help from my friend, liqueur.
Prep Time 5 minutes
Total Time 5 minutes
Course Drinks
Servings 1 cocktail

Ingredients
  

  • 2 tbsp salt
  • 1 tsp chili powder
  • 1 large peach, sliced
  • 1/2 oz lime juice
  • 1-2 tbsp agave syrup, or to taste
  • 1 1/2 oz tequila
  • 1 oz peche de vigne (peach liqueur)
  • ginger beer, for topping

Instructions
 

  • Peel the peach, if desired. Place in a food processor and puree until smooth. You will not need all of the puree unless you're making multiple margaritas. One peach will yield about 1/2 cup puree.
  • Run a lime wedge around the rim of a cocktail glass. Toss together the salt and chili powder, then swirl the rim in the salt. Shake off excess.
  • Measure the lime juice, agave, tequila, and peche de vigne into a shaker. Stir gently or shake. Fill the prepared glass with ice and top with a splash of ginger beer, as desired.
