PEACHEEEEEEES.

You know, I wasn’t going to buy peaches this week, but the temptation of the big cart in the center of Publix weakened by knees. It looked freshly stocked with the huge, colorful rounds. I couldn’t resist. I bought six of them and now I have to figure out how to use them up before they overripen.

No problem. Late August is prime time to grab what peaches and remain and whip up whatever you fancy from the fruit. Soon enough we’ll switch from stone fruit to apples and pears, which is exciting as shit. But for now – let the peaches reign.

I started on my peach melba kick with an ice cream loaf cake. The combination of raspberries and peaches is quite lovely, a tart-sweet play. Add them both to a pretty cocktail glass in combination with sparkling rosé wine and a touch of vodka, and you’ve got yourself a swell weekend happy hour. Cheers!

Give ‘Em the Ole Razzle Dazzle

This spritz is so easy, I probably don’t even need to tell you how to do it. But I’m gonna anyway, because it’s my job.

I use peach jam and fresh raspberries as the base. Peach jam has a more concentrated flavor than fresh peaches, which is why I like it here instead of puree or similar. Muddle both up with a bit of lemon juice, then add the vodka.

Shake with ice, then strain into a cocktail glass. Top off with plenty of rosé and your choice garnishes. I like peach slices, more raspberries, and a sprig of thyme. I’d have used some mint, but my package rotted. Boo.

How are you celebrating the weekend? We’re heading out to dinner on Sunday and beforehand I plan to see my momma for coffee, so nothing too spectacular here. Whatever you do, be safe, enjoy your cocktails, but please don’t drive after.

Ingredients
  

  • 1 tbsp peach preserved
  • 5-6 fresh raspberries
  • 1/2 oz lemon juice
  • 1 oz vodka
  • 4 oz sparkling rosé wine
  • peach slices, extra raspberries, and thyme, for serving

Instructions
 

  • In the bottom of a cocktail shaker, muddle the raspberries, peach jam, and lemon juice. Measure in the vodka. Add ice and shake until cold. Strain over ice and top with the wine. Arrange peach slices, raspberries, and thyme sprigs as desired.
