So a lightning bolt struck my work the other day.

Either that, or something right next to it, like a light pole or a car or the Wendy’s across the street. My coworker was outside cleaning some mats and suddenly a wicked crack resounded and scared all of us shitless. Truly, that thing came out of nowhere. The clouds were widespread but not ominous and we hadn’t heard a single rumble all morning until then.

Learns you a thing about Florida. We take lightning a bit less seriously than some, which isn’t exactly great, but it doesn’t take much to whip us right back to awareness. We are the lightning capital of the US, after all. That actual “bolt out of the blue” was quick to remind all who heard.

Hopefully, this weekend will not involve much literal lightning (except the hockey game, GO BOLTS) since I’m “racing” a 5K on Saturday and our anniversary is Sunday. Would like storms to shoo away for the time being.

Since I’ve a festive weekend, let’s celebrate with a Pineapple Mojito. A sweet and fresh standalone cocktail or an easy, pretty pitcher sip for a crowd. Nothing complex here, just a handful of bright, complimentary flavors.

A Sweet-o Mojito

The simple steps? Let’s count them down:

One…Make up some spicy chili salt for the rim. The recipe card makes more than you need, so you can indulge in multiple cocktails or serve them to someone cool. Rub the rim(s) of the glass(es) with a lime wedge and dip into the salt to coat. Fill glass(es) with ice.

Two…Muddle mint leaves with lime juice and agave.

Three…Pour in pineapple juice and rum. Shake with ice until nice and cold. Strain into prepared cocktail glass.

Four…Garnish with mint and a pineapple wedge. Sip. Ah.

Ingredients
  

  • 1/4 cup flaky salt
  • 1 tsp chili powder
  • 8 fresh mint leaves, plus more for garnish
  • 1/2 oz lime juice
  • 1/3 cup pineapple juice
  • 2 oz white rum
  • 1-2 tsp agave syrup, or to taste
  • pineapple wedges or chunks, for serving

Instructions
 

  • Toss the salt with the chili powder in a shallow bowl. Rub a lime wedge around the rim of a cocktail glass and dip into the salt, swirling to coat. Shake off excess and fill the glass with ice.
  • In a shaker, muddle the mint leaves with the lime juice and agave until smashed. Add in the pineapple juice and rum. Shake with ice and strain into prepared cocktail glass. Garnish with more mint leaves and a pineapple wedge, as desired.

  • 1/2 cup mint leaves, lightly packed, plus more for garnish
  • 1/2 cup lime juice
  • 3 cups pineapple juice
  • 1 cup white rum
  • 3-4 tbsp agave syrup
  • pineapple wedges or chunks, for serving

Instructions
 

  • Mash the mint leaves in a cocktail shaker or bowl. Add to a pitcher along with the lime juice, agave, pineapple juice, and rum. Stir to combine. Divide into glasses and garnish with mint leaves and pineapple wedges, as desired.
