No-sweat Saturday sippin’. Maybe that’s how I should name my weekend cocktail fixtures, eh?
Bringing you an ultra quick, four ingredient glass of fun. I bought ginger beer this week with no real intended purpose, until I thought up this easy variation of a rummy cocktail. Only logical that I match my dark and stormy disposition with an appropriate drink.
We’re supposed to have some really beautiful weekend weather, which hopefully will translate to some time outside and a cool but festive drink. I at least can guarantee the latter by providing you with today’s Pumpkin Dark and Stormy. Fingers crossed the weather won’t match.
The dark and stormy is usually a simple mix of rum, lime juice, and a big fizzy cap of ginger beer. Rumor has it that the original, authentic dark and stormy must be mixed with Goslings brand rum, and restaurants have been sued over attempting to market a D&S that does not use Goslings.
So, I hope I don’t face a lawsuit by calling this a dark and stormy, even though I use another brand of unnamed rum.
Become the Darkness
I bought so much pumpkin butter last week that I’m now swimming in it’s spiced depths, which is why the aggressive influx of pumpkin-themed drinks have popped up in the FMG-verse.
Simple combine the pumpkin butter, rum, and some lemon juice (another deviation from the classic, I just think lemon pairs more easily with the flavor profile of the butter) in a shaker and have a dance party to mix it all up.
Pour into a glass and top with a generous sploosh of ginger beer. I like to garnish the finished drink with thyme sprigs and a star anise, because anise is just so lovely on a cocktail, don’t you think?
See, nothing to it, but the minimalist nature of the drink doesn’t detract from its coziness and seasonality. Easy drinking for easy autumn nights.

Ingredients
- 1 tbsp pumpkin butter
- 2 oz spiced rum
- 1/2 oz lemon juice
- 4 oz ginger beer
- thyme sprigs and star anise, to garnish
Instructions
- In a shaker, combine the rum, pumpkin butter, and lemon juice. Fill with ice and shake until cold. Pour into a cocktail glass and top with ginger beer. Garnish with thyme and star anise, as desired.

Wow!!! This is delicious, super easy, and very much perfect for the season. I actually added another tablespoon of pumpkin butter, because I LOVE it and could probably have eaten the entire jar if no one would’ve wondered where it all went. LOL!
I may bring it to an outdoor party before Halloween. I’ll make a bigger batch and stir in the ice before adding the ginger beer when ready to serve.
