The expression “embarrassingly easy” secondhand embarrasses me. Why should I be embarrassed my simplicity?

A lot of shit irrationally annoys me (fatal flaw) and a theme that seems to crop up is things people feign self-consciousness about that really don’t need that pseudo-emotional response. One example is when Insta-coaches say “run so slow you’d be embarrassed to be seen by your friends.” Do you think anyone is such a watchdog and can calculate your pace simply by looking at you? Nobody cares about your running that much. Except you. Calm the fuck down.

“Embarrassingly easy” doesn’t irk me as much as the above example, but I’ll say that this cocktail is easy and I ain’t got no shame about the fact. Sometimes, especially after the week we central Floridians underwent, shit shouldn’t be complicated. Hell, a simple glass of cheap wine might do the trick for some, but I present an alternative with this Rosé Aperol Spritz for those of us craving a cocktail but not really wanting to make a syrup or shake an egg white to oblivion (though if you do, I’ve a drink for that, yo.)

When J and I dined at Legal Seafoods, I indulged in a spritz that ultimately inspired this drink. Pretty, went down smooth, got me drunk-texting selfies to one of my friends and my sister. That’s not saying much, though, because I’m a complete lightweight. This lean-back, laugh, slow-sip drink is perfect for low-key October weekends. Keep it in your back pocket for the holidays, too.

Say Hey for Rosé

Four little ingredients for a banger of a drink: Aperol, sparkling rosé wine, a touch of apple cider, and ginger beer. The latter pair offer an autumnal hint to the citrusy sip.

No need for a shaker in this drink. Simply fill a glass with ice, stir together the Aperol , cider, and wine (let the wine fizz-pop for a moment before you give it a little mixy mix), and splash on some ginger beer for a bit of extra fizzy wizzy. I add a little orange wedge and a bit of thyme for green, because I like green, and we could all use some more green in our lives.

I’ve been uprooted for the past two weeks between our trip and evacuation, so I plan this weekend to practice extra gratitude for my safe, warm dwelling by sitting back or tooling around intuitively based on my whims. I, above all, am incredibly humbled that Tampa was spared yet again from destruction. Be kind to people this week, folks. So many need it.

Ingredients
  

  • 3 oz aperol
  • 2 oz apple cider
  • 3 oz sparkling rosé wine
  • splash ginger beer
  • orange wedges and thyme sprigs, for garnish

Instructions
 

  • Fill a glass with ice. Measure in the aperol, apple cider, and rosé. Top with a splash of ginger beer. Garnish with orange wedges and thyme sprigs, as desired.
