Mezcal isn’t just for margaritas, friends!
Peach season is closing down, so here’s a nice end of summer cocktail with some gentle fizzies and a tint of smoke to light your pants afire.
Smoky Peach Thyme Bourbon Twist features a light simple syrup encircling fresh lemon, mezcal, and bourbon. Super minimal, yet a maximal taste.
I couldn’t call this a smash since you aren’t Hulking anything in a shaker and couldn’t call it a sour because it isn’t really sour, so why not a twist?
Just Peachy
The only step involving some preplanning is heating the peach thyme simple syrup. As the name suggests, it’s pretty simple. Simmer a couple peaches and thyme sprigs in sugar and water, then let it steep off the burner for about 10 minutes. Strain into a jar or resealable container otherwise.
To a shaker, add a bit of the peach syrup – I suggest an ounce/2 tablespoons, but if you like a sweeter drink, add some more! – along with lemon juice, mezcal (key to smokiness), and bourbon. Shake with ice and pour into a nice glass. Top with sparkling water. Ginger beer also tastes great if you want a bit stronger flavor to hit your lips on first sip!
I’m fairly convinced peach cocktails are a favorite. That, and perhaps grapefruit. From here forth I’ll begin leaning into early autumn flavors more heavily, but the transition won’t be entirely stark since it’s still early September and plenty of summer produce still exists to play with. We’ll have some fun next week with a party-friendly bev appropriate for summer refreshment but also friendly for appetizer season. Pretty hyped!

Ingredients
- 2 peaches, diced
- 4 sprigs fresh thyme
- 1/2 cup sugar
- 1/2 cup water
- 1/2 oz lemon juice
- 1/2 oz mezcal
- 1 1/2 oz bourbon
- sparkling water, to top
Instructions
- In a small sauce pan, heat the peaches, thyme, sugar, and water for 5 minutes until the peaches soften and are easily broken up with a spoon. Remove from heat and let steep 10 minutes. Strain syrup through a fine mesh sieve, squeezing the peaches to remove as much syrup as possible.
- In a shaker, add 1 oz peach syrup, lemon juice, mezcal, and bourbon. Shake with ice and pour into a glass. Top with sparkling water and garnish with a peach slice and thyme sprig.
