I love most recipes that I don’t fully figure out until I stare down the grocery shelves directly. I run to Trader Joes every Wednesday and I’ve learned you can’t be committed necessarily to one product, for their inventory is ever rotating and quite finicky if your timing is just a fraction off. I initially thought I might buy some of their watermelon juice for a similarly-flavored marg. No cigar. However, the bottle of pineapple juice made eye contact and waved. So, I took it and shook it. How about that?
Ginger beer is not a classic component of a margarita, but I like a bit of carbonated spunk in my cocktails. Sidebar: strangely, I’ve never taken to soda. Probably the unmistakable chemical taste. The ginger inside the cocktail lends the taste well enough, though, that if you’re not a fan of ginger beer or sneer a bit at anything you deem an interloper, you can leave it off.

Spiced Honey Citrus Mint Bourbon Smash
Butterbeer Bourbon White Hot Chocolate
Ingredients
- 1 tsp minced or grated ginger
- 1/3 cup pineapple juice
- 1 oz lime juice
- 2 oz tequila
- 1-2 tsp agave
- 2-3 slices jalapeno
- ginger beer, to top
lime sugar
- 1 tsp lime zest
- 1/4 cup granulated sugar
Instructions
- To make the lime sugar, simply whisk the lime zest and sugar together on a small plate or shallow bowl.
- Rub a lime wedge around the rim of your cocktail glass. Dip the glass in the sugar and rotate to and fro until thoroughly coated.
- In the bottom of a shaker, muddle ginger. Pour in pineapple juice, lime juice, tequila, agave, and jalapeno slices. Fill with ice and shake vigorously – the longer you shake, the more jalapeno infused and the spicier the drink will be! Strain over ice. Top with ginger beer. Garnish with lime wheels.
