I really could’ve knocked back three of these. I mean, best I didn’t, for I was a bit knuckleheaded after one. But I could’ve, because tasty.

I never order margaritas from chain restaurants – well, I don’t order much from chain restaurants, but especially not margaritas – because most of their recipes are laden with random sugar of which I’m not much a fan. Local places I’ve visited make mean margs, and I wanted to channel some of that mixologist magic into a fruity, easy springtime cocktail with ingredients you can keep on hand for many an occasion.

Strawberries are growing sweeter by the week, so when you snag a package of juicy delightful ruby berries, try this cocktail out. The chamomile tea isn’t necessarily a household staple, but it can multitask as a sleep aid or comforting beverage if other drinks aren’t filling the need. Tequila should be on your bar cart already. If it’s not, seriously, get on it.

The prep time is higher merely for steeping tea. You can do this while eating lunch or farting around with other dinnertime tasks. The rest is just some muddling muscle power, a few shakes, and a pour. Oh, and can’t forget the ginger sugar rim for a pretty adornment and a little snap of flavor when first contacting your lips.

Servings 1 cocktail

Ingredients
  

  • 2 chamomile tea bags
  • 1 tsp grated ginger
  • 2 tbsp agave
  • 1/3 cup fresh strawberries
  • 1/2 oz lemon juice
  • 3-4 mint leaves
  • 2 oz tequila
  • strawberry slices, chamomile flowers and mint leaves, for garnish

ginger sugar

  • 1/4 cup sugar
  • 1 tsp ginger powder

Instructions
 

  • Boil 1 cup of water. Remove from heat and steep chamomile tea bags along with grated ginger and agave for 20 minutes. Squeeze out tea bags of excess water. Set brewed tea in the fridge until cooled, about 10 minutes.
  • To make the ginger sugar, mix the sugar and ginger in a shallow dish.
  • Wipe the rim of the cocktail glass with lemon wedge, then dip into the ginger sugar and turn until nicely coated. Set 4-5 ice cubes in the glass.
  • In the bottom of a cocktail shaker, muddle strawberries and mint leaves. Measure in1/2 cup brewed tea, lemon juice, and tequila. Add ice and shake. Strain into the glass. Top with chamomile flowers, strawberry slices, and mint leaves, as desired.
