sugar cookie protein snack bites
I could not contain my credit card when I saw that Wild Friends released their seasonal peanut butter flavors a week or so ago. When I caught wind of their existence last Christmas, I asked both my mom and my sister for the variety pack – turns out neither of them coordinated their gift lifts and I wound up with two batches for the holidays. I’m not complaining, they’re all phenomenal and certainly graced more than a few oatmeal bowls in their lifespans.
I always drizzle the Sugar Cookie atop a batch of Cookies & Cream Protein Overnight Oats because it pairs so wonderfully with the protein powder I add to the recipe. In these energy bites, however, the peanut butter is the main event, not a sideshow. These nuggets are an ideal snack when you crave a hit of sweetness but need some nutrition paired alongside. Each bite contains about 7 grams of protein (can vary depending on the brand of powder for which you opt) and is easily adjusted for most dietary leanings. Vegan? Use a plant-based vanilla protein powder. Gluten free? I don’t swing this way, but if you have gluten free oats laying around, perfect. They’re a treat without the sugar-laden high-and-crash.

Ingredients
- 1 cup oats, ground into a flour (or prepackaged oat flour)
- 1 scoop vanilla protein powder of choice
- 1/4 cup unsweetened flaked coconut
- 1/2 cup Wild Friends Sugar Cookie peanut butter
- 2-4 tbsp maple syrup, or liquid sweetener of choice
- pinch sea salt
Instructions
- If you are using whole oats, grind them into a flour in your food processor. Add protein and coconut to the bowl of the food processor and whirl for about 30 seconds. You can also do this, and the remaining steps, by hand, if you wish. Dump in peanut butter, syrup, and salt, blend until a sticky, cohesive dough forms. Start with the minimum amount of maple syrup and add more if the batter is too dry and crumbly.
- Shape into about 12 balls by rolling ~1 tablespoon scoops in between your palms and place in a plastic or glass container. When all are done, refrigerate about 20 minutes to let them set. These will keep about 5-7 days in the fridge and MUCH longer in the freezer.
