Fresh and fast Friday cocktail: Vanilla Apricot Paloma, a different way to tequila if a marg just won’t do.

Been a long week, man, so why not settle in with a drink in hand?

Boggles me completely that June is halfway through and, thus, the year will take its downward sleigh ride. My half birthday is June 30. Not that anyone is keeping track, but afterwards I’ll sit closer to 28 than 27, and even closer to 30. Insanity.

But let’s think more of the present, such as what you might sip on this evening to unwind and let your cares roll down the side of the chair. This is a good start.

The classic paloma contains tequila and grapefruit soda, and while I made a couple swaps mostly due to ingredient availability but also as a means of lightening the glass’s caloric level, this version is a swell nod to the original. I used fresh grapefruit juice and sparkling water to emulate the soda and keep the sugar lower, and let me tell you, little beats a freshly squeezed wedge of citrus.

Otherwise, the components are easy to obtain: apricot jam, vanilla extract, cider vinegar (you can’t taste it, I promise!) and of course a couple ounces of tequila. Es todo, mi amigo.

Slightly sweet, slightly sour (like me), tinged with vanilla extract and bulked up with plenty of tequila for a modern rendezvouz on a classic citrusy paloma cocktail.
Servings 1 cocktail

Ingredients
  

  • 2 tbsp apricot preserves
  • 1 tsp apple cider vinegar
  • 1 1/2 tsp vanilla extract
  • 1/3 cup fresh grapefruit juice
  • 2 oz tequila
  • sparkling water, for topping

Instructions
 

  • If desired, rub rim of a glass with a grapefruit wedge, then swirl in sugar. Fill glass with ice.
  • In a cocktail shaker, combine apricot preserves, cider vinegar, vanilla, grapefruit juice, and tequila. Add ice and shake until cold. Strain into prepared glass and top with a grapefruit wedge and decorative flowers!
