What a treat for your Easter table! Whiskey Brown Sugar Caramelized Onion Baked Brie is decadent, creamy, slightly smoky from the cap of bronzed onions, and so simple you’ll be impressed with yourself and your creation.

Baked brie is an indulgence I don’t think I can stomach more than once in a blue moon. Beyond delicious, but super intense and something best reserved for special occasions. Like Easter, which is why I share this now. You’ll be surprised how something so beautiful takes little preparation, aside from arranging items on your serving board. That usually takes me longer than the cooking itself because I have this issue of never being satisfied with 90% of what I do.

We have two main steps with this baked brie: caramelizing the onions, and baking the brie. You can definitely multitask if you wish, but I concentrated on one at a time to keep myself from forgetting about one food item and mucking up the whole shebang.

For the onions, simply stir together some butter, whiskey, brown sugar, onions, and a bit of thyme in a skillet and cook on very low heat for at least 20 minutes. The onions brown and soften and turn slightly jammy. I let mine get a slightly crisp because that is my preferred texture, but you can stop with just an even, deep golden hue if you like.

The brie just needs a cozy little bed of parchment paper and some heating time in the oven. Do not remove the rind on the brie. Whether you eat it once warmed is up to you, but if you break it off prematurely you’ll end up with a gooey shitshow in your oven.

When the brie is ready, top the wheel with the onions and a few sprigs of thyme for some green. I arranged toasted baguette, apples, and grapes on my board, but many an accoutrement works here, like crackers or fresh vegetables.

Seriously, that’s it. A lovely, tasty, easy centerpiece for your Easter table. For frick’s sake, just don’t remove the brie rind.

Ingredients
  

  • 1 yellow onion, sliced
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 2 tbsp whiskey
  • 2 tsp fresh thyme, chopped
  • kosher salt and pepper, to taste
  • 1 8 oz wheel brie
  • toasted baguette, crackers, sliced apples, grapes, and raw vegetables, to serve

Instructions
 

  • Melt butter in a skillet over medium heat. Toss in sliced onions, whiskey, brown sugar, thyme, and a pinch each of salt and pepper. Reduce heat to medium-low and cook, stirring every few minutes, for at least 20 minutes until deep brown and jammy. Remove from skillet into a bowl or storage container and cover to keep warm.
  • Preheat oven to 350 degrees.
  • Place brie wheel, with the rind intact, on a piece of parchment paper. Transfer to a baking sheet and set in the oven for about 15 minutes. Tap the top of the brie without piercing once time elapses. If it is wiggly and pliable, the brie is ready.
  • Remove from oven and set onto a serving platter of choice. Top with onions and additional fresh thyme, as desired. Serve with choice dipping vessels. I opted for baguette, apples, grapes, and broccoli.
