A surprise pop of muddled mint highlights this tangy-sweet frozen delight perfect for warm evening barbecues and pool outings!

Ingredients
  

  • 1/4 cup mint leaves
  • 3 tbsp lime juice
  • 1/2 - 3/4 cup white rum
  • 1/2 cup fresh squeezed orange juice (or good quality store brand)
  • 2 cups frozen mango chunks
  • 1.5-2 cups ice

Instructions
 

  • In a cocktail shaker, muddle the mint leaves and lime juice thoroughly. Add rum and orange juice. Give the thing a good few shakes, then strain into a blender. Toss in mango chunks and ice. Blend until frosty and thick. Serve garnished with mint leaves and citrus slices, as desired.
