buffalo chickpea nachos________________________When the tortilla chip cravings hit (for me, constantly), make these nachos. Saucy buffalo chickpeas, cheddar cheese, and plenty of toppings for a fun finger food app or dinner!
scallions, cilantro, avocado, Greek yogurt, and limes, to garnish
Instructions
Preheat oven 350 degrees.
In a large bowl, whisk together melted butter, hot sauce, honey, and cider vinegar. Add chickpeas and toss until well coated.
Arrange one layer of tortilla chips in an oven-safe skillet or dish. Top with 1/3 of the chickpeas and 1/3 of the cheddar cheese. Repeat the layering twice more, finishing with the remainder of the cheese. Reserve any buffalo sauce remnant from the chickpeas.
Transfer skillet to oven and bake 10-12 minutes until cheese melts. Remove. Top with chopped cilantro, green onions, sliced avocado, yogurt, and limes, as desired.
