smoky peach thyme bourbon twist_____________________________An easy, lightly sweet cocktail with a peach thyme simple syrup, lemon, and mezcal to accompany a bourbon base.
In a small sauce pan, heat the peaches, thyme, sugar, and water for 5 minutes until the peaches soften and are easily broken up with a spoon. Remove from heat and let steep 10 minutes. Strain syrup through a fine mesh sieve, squeezing the peaches to remove as much syrup as possible.
In a shaker, add 1 oz peach syrup, lemon juice, mezcal, and bourbon. Shake with ice and pour into a glass. Top with sparkling water and garnish with a peach slice and thyme sprig.
