cheddar ranch jalapeno poppers

- 12 jalapenos, halved with seeds removed
- 8 oz cream cheese, softened
- 2 tbsp vegan or regular mayonnaise
- 1/4 cup chopped green onions
- 1 tbsp dried parsley
- 1 tsp dried dill
- 1 tsp garlic powder
- 1 1/2 cups sharp cheddar cheese, shredded
- sour cream or ranch dressing, to serve
Preheat oven to 350 degrees. Line a large baking sheet with parchment.
In a bowl, combine the cream cheese, mayonnaise, green onions, parsley, dill, garlic powder, the cheddar cheese, and a pinch of salt and pepper.
Stuff each jalapeno with a heaping tablespoon of the filling. Line the jalapenos, stuffed side up, onto the baking sheet. Bake for 20-25 minutes until the filling is melty and gooey and the peppers are soft. Serve warm with ranch or sour cream, as desired.
