guacamole salad

Think of it like deconstructed guac, over lettuce.

Ingredients
  

  • 4 cups shredded romaine lettuce
  • 3-4 avocados, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pickled or regular red onions, sliced thinly
  • 1-2 serrano or jalapeno peppers, sliced
  • 1/2 cup fresh cilantro, chopped
  • tortillas or tortilla chips, for serving
  • 1/2 cup extra virgin olive oil
  • 1/4 cup lime juice
  • 2 cloves garlic, minced
  • 2 tbsp honey
  • 1/2 tsp cumin

Instructions
 

  • In a bowl or jar, whisk or shake the olive oil, lime juice, garlic, honey, cumin, and a pinch of salt and pepper, until emulsified. Taste and adjust seasoning as desired.
  • Pile the lettuce into a large serving platter. Arrange the avocado, tomatoes, and onions overtop. Sprinkle with extra cilantro.
