pineapple mojito

- 1/4 cup flaky salt
- 1 tsp chili powder
- 8 fresh mint leaves, plus more for garnish
- 1/2 oz lime juice
- 1/3 cup pineapple juice
- 2 oz white rum
- 1-2 tsp agave syrup, or to taste
- pineapple wedges or chunks, for serving
Toss the salt with the chili powder in a shallow bowl. Rub a lime wedge around the rim of a cocktail glass and dip into the salt, swirling to coat. Shake off excess and fill the glass with ice.
In a shaker, muddle the mint leaves with the lime juice and agave until smashed. Add in the pineapple juice and rum. Shake with ice and strain into prepared cocktail glass. Garnish with more mint leaves and a pineapple wedge, as desired.
