- 4 cups romaine lettuce, shredded
- 2-3 cups red cabbage, shredded
- 1 can chickpeas, drained
- 1 cup cherry tomatoes, halved
- 1/2 cup kalamata olives, halved
- 1/2 cup green olives, halved
- 1/3 cup pepperoncinis, sliced
- 2 Persian cucumbers, sliced
- 1 cup provolone cheese, cubed
Italian vinaigrette
- 1/2 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- 1 tbsp honey
- 2 tsp dijon mustard
- 1 tsp dried basil
- 1 tsp dried oreano
- 2 cloves garlic, minced
Make the dressing. In a bowl or jar, whisk or shake together the olive oil, red wine vinegar, honey, dijon mustard, basil, oregano, garlic cloves, and a pinch each of salt and pepper. Taste and adjust seasonings as needed.
In a large bowl, toss together all of the salad components until combined.
Divide the salad among bowls and serve with the dressing on the side. And your favorite pizza.
