pizza night italian chopped salad

A big ole green accompaniment to your cheesiest slices.

Ingredients
  

  • 4 cups romaine lettuce, shredded
  • 2-3 cups red cabbage, shredded
  • 1 can chickpeas, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup kalamata olives, halved
  • 1/2 cup green olives, halved
  • 1/3 cup pepperoncinis, sliced
  • 2 Persian cucumbers, sliced
  • 1 cup provolone cheese, cubed

Italian vinaigrette

  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tbsp honey
  • 2 tsp dijon mustard
  • 1 tsp dried basil
  • 1 tsp dried oreano
  • 2 cloves garlic, minced

Instructions
 

  • Make the dressing. In a bowl or jar, whisk or shake together the olive oil, red wine vinegar, honey, dijon mustard, basil, oregano, garlic cloves, and a pinch each of salt and pepper. Taste and adjust seasonings as needed.
  • In a large bowl, toss together all of the salad components until combined.
  • Divide the salad among bowls and serve with the dressing on the side. And your favorite pizza.
