star spangled brownies

Ingredients
  

  • 10 tbsp butter
  • 1 1/2 cups dark chocolate chips
  • 1 cup sugar
  • 1/4 cup dark brown sugar
  • 3 large eggs, at room temperature
  • 1 tsp instant espresso or coffee (optional)
  • 1 tsp vanilla extract
  • 3/4 cup all purpose flour
  • 1/3 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 cup red, white, and blue M&Ms

Instructions
 

  • Preheat oven to 350 degrees. Line a 9 x 9 inch baking pan with parchment paper.
  • In a large bowl, beat the eggs until very bubbly and frothy, about 2-3 minutes.
  • Melt the butter and 1 cup of chocolate chips in the microwave for 1 minute. Stir until smooth, then whisk in the sugar and brown sugar until well combined.
  • With the mixer running, stream the chocolate mixture into the eggs. Scrape down the sides of the bowl with a spatula as needed to incorporate. Mix in the instant espresso/coffee (if using) and vanilla.
  • Add the flour, cocoa powder, baking powder, and salt until just combined. Fold in 3/4 cup of M&Ms and the remaining 1/2 cup of chocolate chips. Do not overmix.
  • Pour the batter into the prepared baking pan. Press the remaining 1/4 cup of M&Ms onto the surface. Bake for 30-35 minutes until the center is set and an inserted toothpick emerges with just a few moist crumbs. Cool at least 30 minutes, then slice and serve!

Notes

*M&Ms: I didn't mean to buy peanut butter M&Ms, but did, so I ended up using those in the recipe and they turned out amazing; but that's why they look massive. Regular red white and blue M&Ms work great too!
