whipped feta peach garlic bread

A seriously tasty appetizer bursting with fresh peaches atop buttery grilled garlic bread.

Ingredients
  

  • 8 oz block feta cheese
  • 1/2 cup whipped cream cheese
  • 2 tbsp honey
  • 2 large peaches, sliced
  • 1/4 cup extra virgin olive oil
  • 2 tbsp white balsamic vinegar
  • 1 tbsp honey
  • 2 tbsp fresh oregano, chopped
  • 1 loaf sourdough or French baguette, or ciabatta
  • 4 tbsp butter, softened
  • 2 cloves garlic, minced

Instructions
 

  • To make the whipped feta: combine the feta, cream cheese, and honey in a food processor. Blitz until very creamy and smooth, about 2-3 minutes, scraping down the sides of the bowl as needed.
  • Add the peach slices to a medium sized bowl. Whisk together the olive oil, white balsamic vinegar, honey, 1 tablespoon of fresh oregano, and a pinch each of salt and pepper. Taste to adjust as needed. Add a couple spoonfuls to the peaches and toss gently to coat.
  • Heat your grill or grill pan to medium, or broiler to high. Stir the butter, garlic, and remaining tablespoon of oregano. Slice your baguette into 6-8 pieces and brush the butter on the cut side. Grill or toast butter-side down (or up, under the broiler) for 2-3 minutes until golden and charred.
  • Swirl the whipped feta onto each piece of bread. Arrange the peaches on top. Drizzle with extra vinaigrette and serve with fresh basil, as desired.
